Appearance: Glucono delta-lactone is white crystal or crystalline powder, nearly odourless, taste sweet firstly and then acid (different with the taste of gluconic acid). It is easy solute in water (60g/100Ml) and slightly solute in ethyl alcohol (1g/100Ml), hardly solute in diethyl ether. It appear equilibrium mixture of gluconic acid with it's δ-lactone r-lactone. The PH value of 1% solution is 3.5 and become to 2.5 after 2 hours. The product will be very stable if coated By 5-10% calcium stearate even it is used in hygroscopic products. It will decompose on 153℃.
Function and uses:
1.It can make proteinsolidification when glucono dela-lactone produce gluconic acid in solution and the effect is better than calcium sulfate, calcium chloride and salt. The tofu produced by glucono delta-lactone has better water-retaining property, texture fine and smooth, slide and soft, and has preservative effect.
2.It has preservatives effect on mould and general bacterium, so it can be used in fish, meat, birds and shrimp, it can make products looks shine, not browning, and keep meat elastic.
3.As bulking agent it is compatible with sodium bicarbonate to make baking powder. When heating gluconic acid react with sodium bicarbonate to produce carbon dioxide, loose the structure so it is suitable for pastry and fried food.
4.It can also be used as detergent for semiconductor elements to clear the oxidation film on the appearance of semiconductor elements.
